Childhood favourite revisited

I was looking in the fridge for something to cook the other night and I decided it was time to reinvent a childhood favourite, given that we had purchased a lot of cheap zucchini at the greengrocer over the weekend I decided I would make a Zucchini slice, but as Will does not eat pork, I decided to leave out the bacon and add some additional flavours.

  • 2 cups grated zucchini
  • 1 onion finely diced
  • 1 cup tasty cheese
  • 1 cup self raising flour
  • ¼ cup olive oil
  • 6 eggs
  • 1 teaspoon dried chilli flakes
  • salt/pepper
  1. Preheat over to 170 C
  2. Grease a 20cm square ceramic ovenproof dish
  3. In a small fry-pan heat the oil and add the onion, this needs to be cooked on a low heat so the onion does not brown but cooks to translucent
  4. Remove from heat and cool slightly (do not discard the oil)
  5. Combine Zucchini, tasty cheese, Flour, Chilli Flakes, salt and pepper in a large bowl
  6. Lightly beat the eggs an another bowl
  7. Add Oil and Onion mix to the Zucchini mix and mix well, add the lightly beaten eggs and mix fully.
  8. Pour mix in to your greased dish and bake in the over for 35-40 mins (until set and lightly browned on top
  9. This can be served immediately or cooled and eaten cold for lunch.
